Whip cream until stiff and fold it into mixture.

Beat egg whites with 1 tablespoonful of sugar until they form stiff peaks and gently fold them into mixture.

Spoon the mousse into individual serving bowls or glasses and refrigerate for about 3 hours.
Serve with wafers or tuiles.

Amaretti mousse

Serves 10

INGREDIENTS
4 egg yolks
½ cup (65g) caster sugar
1 cup (250ml) cream, double
1 teaspoon vanilla essence
150g amaretti biscuits, crushed
½ cup prunes, softened and chopped
½ cup walnuts, chopped
4 egg whites
½ cup (65g) caster sugar

PREPARATION
Beat egg yolks and sugar until light and fluffy.
In another bowl, whip cream until thick and stir in vanilla essence.

Fold cream into egg yolk- mixture, together with the crushed amaretti biscuits, prunes and walnuts.

Whisk egg whites with sugar until stiff and fold gently into the mixture.
Spoon into a deep container and chill well before serving.

Serving suggestion: Spoon into individual serving bowls or glasses, sprinkled with chocolate chips or shavings.

Fried Shrimp Recipe
----------------------


Ingredients:

For Frying Vegetable Oil     
1 Eggs
1/4 Cup Flour - All Purpose     
1/2 Cup Bread Crumbs - Panko
12 Shrimp - Jumbo/Large


Cooking Directions:

Peel shrimp and make a couple incisions on the stomach side so that it stays straight. Put flour on shrimp lightly Dip the shrimp in beaten egg. Cover the shrimp with panko. Heat oil in a deep pan to 350 F degree. Fry shrimps until brown.

Chicken and Apple Curry
---------------------------

Ingredients:

To Taste Seasoning - Salt     
To Taste Seasoning - Black Pepper
1 Cup Milk     1 Cup (hot) Chicken Broth
8 Skinless, Boneless Chicken - Breast     
1 Tablespoon Seasoning - Curry Powder
3 Tablespoons Flour - All Purpose     
2 (peeled, cored and finely chopped) Apples
2 Small (chopped) Onions     
3 Tablespoons Butter


Cooking Directions:

1. Preheat oven to 350 degrees F (175 degrees C).

2. Saute apple and onion in butter or margarine until tender. Add curry powder and saute 1 minute more. Add flour and continue to cook 1 minute longer. Add stock or broth and milk; stir well.

3. Salt and pepper chicken breasts to taste and lay in a single layer in a 9x13 inch (or larger) baking dish. Pour sauce mixture over chicken breasts and bake in preheated oven for 45 to 50 minutes, until chicken is done.
