Farina Cakes With Jelly



Ingredients

    * 2 cups scalded milk
    * 1/2 cup farina
    * 1/4 cup sugar
    * 1/2 teaspoon salt
    * 2 eggs
    * 1 tablespoon milk


Instructions

   1. Mix farina, sugar, and salt.
   2. Add to milk and cook in double boiler for 20 minutes, stirring constantly until mixture has thickened.
   3. Add a slightly beaten egg and pour mixture into a buttered shallow pan.
   4. Brush over with another slightly beaten egg diluted with milk.
   5. Place in an oven and brown at 350 degrees.
   6. Cut in squares and serve with a cube of jelly on each square.

Spaghetti Italian

Ingredients
    * 1 pound spaghetti
    * 1 can tomatoes
    * 2 cloves garlic
    * ½ cup corn oil
    * 2 tablespoons corn syrup
    * 1 tablespoon Argo or Cornstarch
    * Salt and pepper to taste

Instructions

   1. Put the spaghetti on to cook in plenty of boiling salted water.
   2. Allow thirty minutes.
   3. In the meantime, cut he garlic in bits, fry till yellowed in the corn oil, add the tomato and corn syrup and cook until the spaghetti is done, then rub the sauce through a sieve, thicken with the cornstarch blended with one tablespoon cold water and season to taste with salt and pepper.
   4. Put the spaghetti in a flat bowl or on a deep platter, pour the sauce over, and serve with grated Parmesan or American cheese.

Omelet With Italian Squash



Ingredients

    * 3 eggs, beaten
    * 1/3 Italian squash, peeled, sliced thin
    * 2 tablespoons butter
    * Flour

* 1 tablespoon cream
* 1/4 teaspoon salt

    * A dash of white pepper or paprika

Instructions

   1. Season the Italian squash.
   2. Dredge in flour.
   3. Fry in the butter in frying pan for about 2 minutes.
   4. Pour in the beaten eggs.
   5. Follow the directions for a plain omelet.

Frozen Turkish Coffee

Ingredients

    * 1/2 cup sugar
    * 1/2 cup of water
    * 2 egg whites
    * 1 pint of stiffly whipped cream
    * 1 tablespoon of confectioner's sugar
    * 1 pinch of powdered cinnamon
    * Few drops of vanilla
    * 1 teaspoon of coffee extract, available at drug and grocery stores

   1. Freeze as usual; serve in small crystal cups, garnishing each with a star of whipped cream flavored with almond extract.


Instructions

   1. Heat the sugar and water until it forms a soft ball
   2. Pour it slowly on the stiffly beaten egg whites, beating constantly
   3. When light and creamy, add the whipped cream, confectioner's sugar, cinnamon, vanilla, and coffee extract.
   4. Freeze as usual. Serve in small crystal cups, garnishing each with a star of whipped cream flavored with almond extract.

Cafe Frappe



Ingredients

    * 1 egg white
    * 1/2 cup cold water
    * 1/2 cup ground coffee
    * 4 cups boiling water
    * 1 cup sugar
Instructions

   1. Beat egg white slightly
   2. Add cold water and mix with coffee
   3. Add mixture from above to boiling water. Continue to boil one minute
   4. Let cool for ten minutes. Strain, add sugar, and freeze to a mush
   5. Serve in frappe glasses with whipped cream, sweetened and flavored.

Irish Coffee

Ingredients

    * 1-1/2 ounces Irish Whiskey
    * 2 teaspoons brown sugar
    * Hot coffee to fill one cup or mug
    * Heavy cream

Instructions

   1. Blend the brown sugar, hot coffee, and whiskey in a cup or mug.
   2. Top the coffee drink with a quarter inch of heavy cream, but do not stir.

Alternately, you can top this drink with whipped cream instead of the heavy cream. .

Orange Coffee

Ingredients

To make orange coffee for two, you will need the following:

    * 1 cup prepared strong coffee
    * 1 cup prepared hot chocolate
    * 2 orange slices
    * Whipped cream
    * Dash of cinnamon


Instructions

   1. Combine prepared coffee and hot chocolate in a bowl.
   2. Put one orange slice in each cup and top with the coffee mixture.
   3. Garnish with whipped cream and cinnamon, if desired.

Caramel Macchiato



Ingredients

    * 3 ounces hot, freshly prepared espresso
    * 1 ounce caramel syrup designed for coffee
    * 1 tablespoon foamed milk
    * Whipped cream (optional)
    * Caramel topping (optional)


Instructions

   1. Coat the bottom of your coffee cup with the caramel syrup.
   2. Pour prepared espresso over the caramel.
   3. Top with foamed milk.
   4. If desired, top with whipped cream and/or caramel topping.

    * 1 cup heavy cream
    * 1/2 cup plus 3 tablespoons sugar, divided
    * 1/2 cup unsweetened cocoa powder
    * 1/2 cup water
    * Pinch of salt
    * 3 cups milk
    * 1-1/2 cups strong coffee
    * 1 teaspoon vanilla extract
    * 6 ounces amaretto
    * Desired garnishes

Instructions

   1. Combine 3 tablespoons sugar and the cream in a bowl; whip it until soft peaks form. Refrigerate.
   2. Add water, cocoa, and 1/2 cup sugar to a saucepan and bring to a slow boil, stirring often, over low heat.
   3. Stir in salt, coffee, and milk. Heat to near boiling, and then remove from heat. Add vanilla and stir through.
   4. Divide amaretto between six glasses. Divide coffee mixture between the glasses, pouring over the amaretto. Stir until well blended.
   5. Garnish with whipped cream, chocolate syrup, chocolate shavings, or chocolate covered coffee beans.

Ingredients for Coffee With Honey And Whipped Cream Recipe

    * 1 cup ground coffee
    * 6 and 1/2 cups cold water
    * Several egg shells
    * 1/2 cup cold water
    * Honey to taste
    * Whipped cream


Instructions

   1. Tie ground coffee very loosely in small cheesecloth bag. Put into coffee pot with 6 cups cold water and several egg shells. Let stand 1 hour
   2. Boil for 5 minutes
   3. Add 1/2 cup cold water and let stand 3 minutes
   4. Serve coffee with honey and whipped cream

Peanut Butter Soup



Ingredients

    * 4 tablespoons peanut butter
    * Seasonings to taste
    * 4 cups thin white sauce


Instructions

   1. Mix the peanut butter with a small amount of the white sauce first.
   2. Then add the remainder of the white sauce gradually to the mixture.
   3. Season.
   4. Reheat and serve.

(To make White Sauce: scald 1 pint of milk. Melt 3 tablespoons of butter in a saucepan. Add half a teaspoon of salt, 4 tablespoons of flour, and let cook for one minute, stirring constantly. Add the milk little by little, stirring gently until it boils. Let it boil for 3 minutes.)

Swiss Potato Soup



Ingredients

    * 4 small potatoes
    * ½ onion
    * 1 large flat white turnip
    * 4 tablespoons butter
    * 3 cups boiling water
    * 1/3 cup flour
    * 1 quart scalded milk
    * 1½ teaspoons salt
    * 1/8 teaspoon pepper

Instructions

   1. Wash, pare, and cut potatoes in halves.
   2. Wash, pare, and cut turnips in one-quarter inch slices.
   3. Parboil together for ten minutes and drain. Add sliced onion and three cups boiling water.
   4. Cook until vegetables are soft. Drain, reserving the water. Rub vegetables through a sieve and add the water back in.
   5. Add milk, reheat, and bind with butter and flour cooked together.
   6. Season with salt and pepper.

Ingredients

    * 2 potatoes, peeled, passed through meat chopper
    * 2 carrots, medium size, peeled, passed through meat chopper
    * 6 cups water, boiling
    * 1 cup milk, scalded
    * 2 tablespoons butter
    * Seasonings to taste


Instructions

   1. Boil all ingredients together for about 10 minutes, stirring occasionally to prevent scorching.
   2. Then serve.

Almond Soup



Ingredients for Almond Soup Recipe 1

    * 4 ounces of almonds
    * 1 quart of milk
    * 6 cloves, 1 small blade of mace
    * 2 ounces of butter
    * 2 dozen white peppercorns
    * 1 tablespoon of flour
    * 4 ounces of onions


Instructions

   1. Put the milk in a saucepan with the cloves, mace, and peppercorns; bring it to the boiling-point, and let it simmer.
   2. Chop the onions and fry them in the butter until tender, but not brown.
   3. Add them to the milk and let it boil again; then let it simmer for half an hour; strain and cool.
   4. Blanch the almonds, put them through a nut mill; then pound in a mortar, adding one drop of water occasionally to prevent oiling.
   5. Add the cool milk, a little at a time, to the almond paste, mixing it as smoothly as possible.
   6. Now boil the soup, stirring constantly.
   7. Thicken with either a tablespoon of white roux or a tablespoon of corn-flour.
   8. Boil, and serve with croutons.

Chicken Cream Soup

Ingredients

    * 1 chicken
    * 1 onion
    * 2 hard boiled eggs
    * 1 cup milk
    * 4 quarts of water


Instructions

   1. Boil a whole chicken with an onion in 4 quarts of cold water until reduced to half the original quantity.
   2. Take out the chicken and let it get cold.
   3. Cut off the whole of the breast and chop it very fine.
   4. Mix with the pounded yolks of 2 hard-boiled eggs and rub through a colander.
   5. Cool, skim, and strain the soup into a soup pot.
   6. Season, add the chicken and egg mixture, simmer 10 minutes, and pour into the tureen.
   7. Then add a small cup of boiling milk.

    * 6 slices carrot, cut in cubes
    * 2 stalks celery
    * ½ bay leaf
    * ¼ teaspoon peppercorns
    * 1 sliced onion
    * 1/3 cup hot boiled rice

   1. Add seasonings, vegetables, and ham to stock.
   2. Heat gradually to boiling point and boil 30 minutes.
   3. Strain and add rice.

Ingredients for French Drip Or Filtered Coffee Recipe

For each cup:

    * 1 tablespoon finely ground coffee
    * 1 cup boiling water

Instructions

   1. Place coffee in strainer or filter of the percolator
   2. Gradually add boiling water, allowing it to seep through the coffee slowly
   3. Cover between additions of water in order to retain the flavor and heat
   4. Do not boil
   5. Pour through a second time if strong coffee is desired

White Chocolate Mocha



Ingredients
    * 2/3 cup whole milk
    * 6 tablespoons white chocolate chips
    * Freshly brewed coffee to fill mugs
    * Whipped cream
    * Desired garnishes

Instructions

   1. Combine milk and white chocolate chips in a small saucepan. Heat over low heat, stirring until chips are completely melted.
   2. Pour half of the milk and chocolate chip mixture into each coffee mug.
   3. Pour coffee into mugs, filling about 2/3 of the way.
   4. Top with whipped cream to taste.
   5. If desired, garnish with a maraschino cherry, a sprinkle of cinnamon, or chocolate shavings.
