Apple Toast



Ingredients

    * 4 slices of bread
    * 3 apples, peeled, cored, and sliced
    * 1/2 cup sugar
    * Melted butter

Instructions

   1. Place the bread in a buttered baking pan.
   2. Mix the sugar and melted butter together.
   3. Dip each slice of apple in the melted butter.
   4. Arrange slices of apple on top of slices of bread.
   5. Put baking pan in oven.
   6. Let bake for about 10 minutes or until apple slices are brown and tender.

Nut Scrapple



Ingredients
    * 1 pint of left-over cornmeal mush
    * 1/2 cup or more chopped nuts
    * Jelly


Instructions

   1. Stir together hot mush and nuts.
   2. Put into a wet bread tin.
   3. When cold, slice and broil on a hot, slightly oiled griddle.
   4. Serve with jelly.

Breakfast Cake



Ingredients

    * 2 tablespoons cornstarch
    * 1 cup flour
    * 3 teaspoons baking powder
    * 1/2 teaspoon salt
    * 2 teaspoons cinnamon, divided
    * 1 egg
    * 1/2 cup milk
    * 1/2 cup corn syrup
    * 3 tablespoons corn oil
    * 1/4 cup granulated sugar


Instructions

   1. Sift together cornstarch, flour, baking powder, and 1/2 teaspoon of cinnamon.
   2. Add corn syrup, salt, and 1 teaspoon cinnamon.
   3. Beat the egg and add it to the mixture along with the milk and corn oil.
   4. Spread in a shallow greased pan and sprinkle with mix of granulated sugar and 1/2 teaspoon cinnamon.
   5. Bake in a hot oven at 375 degrees until cooked through.
   6. Serve warm.

Breakfast Puffs



Ingredients

    * 1 cup flour
    * 1/2 cup milk
    * 1/2 cup water

Instructions

   1. Mix milk and water together and add gradually to flour.
   2. Beat with egg-beater until very light.
   3. Pour into hot buttered iron gem pans and bake thirty to thirty-five minutes at 375.

Cheese Toast

Ingredients

    * 4 slices of stale bread
    * 1/2 cup grated cheese
    * 1 cup milk
    * Pepper and salt to taste
    * Fat

Instructions

   1. Boil milk.
   2. Fry slices of bread in deep fat.
   3. Remove from fat and drain.
   4. Place bread in milk until moist.
   5. Season.
   6. Place in baking dish and cover with grated cheese.
   7. Bake for 5 minutes at 375.

Coffee Bread

Ingredients

    * ¾ cup milk
    * ½ cup melted vegetable shortening
    * ½ cake compressed yeast
    * 1 teaspoon salt
    * 2 eggs
    * 1 cup sugar
    * 1 teaspoon lemon extract
    * ¼ cup chopped English walnut meats
    * Flour


Instructions

   1. Heat milk slightly then add flour and yeast dissolved in little lukewarm water.
   2. Allow to rise until light, then add vegetable shortening, beaten eggs, sugar, lemon, salt, and enough flour to make a stiff dough.
   3. Knead ten minutes and let rise until light.
   4. Place in greased pan and let rise again.
   5. Spread with melted vegetable shortening and sprinkle with sugar, cinnamon, and nuts.
   6. Bake at 400 degrees for 30 minutes.
   7. Sufficient for one large loaf.

Milk Toast Recipe

Ingredients

    * 1 pint scalded milk
    * 2 tablespoons butter
    * 2 1/2 tablespoons bread flour
    * 1/2 teaspoon salt
    * 4 tablespoons cold water
    * 6 slices dry toast


Instructions

   1. Gradually add cold water to flour to make a smooth, thin paste.
   2. Add to milk, stirring constantly until thickened.
   3. Cover and cook on low for twenty minutes, then add salt and butter in small pieces.
   4. Dip slices of toast separately in sauce; when soft, remove to serving dish.
   5. Pour remaining sauce over all.

Banana Loaf

Ingredients

    * 2 cups flour
    * 1 cup sugar
    * 1/2 cup butter or margarine
    * 2 eggs
    * 3 large, ripe bananas, peeled and mashed
    * 1/4 cup plus 1 teaspoon water
    * 1 1/2 teaspoons baking powder
    * 1 teaspoon baking soda
    * Pinch of salt


Instructions

   1. Cream the butter or margarine in a bowl with the sugar until light and creamy in texture.
   2. Stir in the mashed bananas and beat to combine thoroughly.
   3. Beat in the eggs, one at a time, blending well.
   4. Sift the flour and salt into the mixture and stir to blend well.
   5. Dissolve the baking soda in the water and stir into the mixture, then stir in the baking powder.
   6. Pour the batter into a greased loaf tin and bake in a preheated oven at 350 degrees Fahrenheit until done, about 45 minutes.
   7. Let cool in the tin for a few minutes, then turn out onto a wire rack to cool completely.

Best Lemon Bars

Preparation Time: 15 Minutes     Servings: 24
Cook Time: 40 Minutes      




Ingredients:
2 (Juiced) Lemons     
1 1/2 Cups Sugar - White
4 Tablespoons Flour - All Purpose     
4 Eggs
2 Cups Flour - All Purpose     
1/2 Cup Sugar - White
1 Cup (softened) Butter


Cooking Directions:
1. Preheat oven to 350 degrees F (175 degrees C).

2. In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.

3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1/12 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.

4. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.

Ingredients:
1/2 Cup Butter     
1 Teaspoon Seasoning - Cinnamon
1/2 Cup Sugar - White     
1/2 Cup Sugar - Brown
1 Cup Flour - All Purpose     
8 (medium, cooking) Apples


Cooking Directions:
1. Preheat the oven to 375 degrees F.

2. Peel, core, and cut the apples into thin slices. Place them in a 9 by 13-inch baking dish.

3. In a bowl with a pastry cutter (or using two forks), mix the remaining ingredients until they are well blended and resemble coarse cornmeal.

4. Sprinkle the mixture over the apples, and bake until apples are tender, about 30 to 35 minutes. Serve warm or cold.

Perfect Peach Upside Down Cake

Ingredients:
1/2 Cup Milk     
1/2 Teaspoon Seasoning - Salt
2 Teaspoons Baking Soda     
1 1/4 Cups Flour - All Purpose
1 Eggs     
1/2 Cup Sugar - White
1/2 Cup (softened) Butter     
5 (peeled, pitted and halved) Peaches
1/4 Teaspoon (ground) Seasoning - Nutmeg     
1/2 Cup (packed) Sugar - Brown
1/4 Cup Butter


Cooking Directions:
1. Cut peaches in half and remove pit. Preheat oven to 375 degrees F.

2. Melt 1/4 cup butter in an 8 inch square pan. Sprinkle with brown sugar and nutmeg. Arrange peach halves, cut side down, in pan.

3. In a large bowl, cream the butter and sugar until light and fluffy. Beat in egg.

4. Stir together flour, baking powder and salt. Add this flour mixture to creamed mixture alternately with milk, beating well after each addition. Spread batter over peaches.

5. Bake at 375 degrees F for 35 to 40 minutes, or until lightly browned on top. Remove cake from oven, and let stand in pan for 5 minutes; invert onto serving platter. Serve with whipped cream.

Honey Basted Nectarines

Ingredients:
1/8 Teaspoon Seasoning - Cinnamon     
1/8 Teaspoon Seasoning - Nutmeg
1 Tablespoon (melted) Butter     
2 Tablespoons Honey
2 (havled, pitted) Nectarines


Cooking Directions:
1. Preheat grill to medium heat, 350 degrees.

2. Cut nectarines in half and remove pits.

3. Brush cut side of nectarines with butter or margarine. Oil grill. Place nectarine halves on grill and cook uncovered for 5-6 minutes (or until fruit is warm and lightly charred). Brush with honey during cooking process.

4. Remove from grill and allow to cool. Serve sprinkled with cinnamon and nutmeg (or a scoop of ice cream).

1 Teaspoon Vanilla Extract     
3 Cups Flour - All Purpose
6 Eggs     
3 Cups Sugar - White
1 1/2 Cups Butter     
1 (8 Ounce package) Cream Cheese


Cooking Directions:
1. Preheat oven to 325 degrees F (160 degrees C) grease and flour a 10 inch tube pan.

2. In a large bowl, cream butter and cream cheese until smooth. Add sugar gradually and beat until fluffy.

3. Add eggs two at a time, beating well with each addition. Add the flour all at once and mix in. Add vanilla.

4. Pour into a 10 inch tube pan. Bake at 325 degrees F (160 degrees C) for 1 hour and 20 minutes. Check for doneness at 1 hour. A toothpick inserted into center of cake will come out clean.

Awesome Baked Sea Scallops

Ingredients:
Wedge (for garnish) Lemons     
1/4 Cup (chopped) Parsley
4 Tablespoons Olive Oil     
1 Cup Bread Crumbs
(To Taste) Seasoning - Black Pepper     
(To Taste) Seasoning - Salt
3 Pinches Nutmeg Seasoning - Nutmeg     
2 (Chopped) Shallot
5 Cloves (minced) Garlic     
5 Tablespoons Butter
16 (rinsed and drained) Scallops


Cooking Directions:
1. Preheat oven to 425 degrees F (220 degrees C).

2. Place scallops, melted butter, garlic, and shallots in a bowl. Season with nutmeg, salt, and pepper. Stir gently to combine. Transfer to a casserole dish.

3. In a separate bowl, combine bread crumbs and olive oil. Sprinkle on top of scallops.

4. Bake in preheated oven until crumbs are brown and scallops are done, about 11 to 14 minutes. Top with parsley, and serve with lemon wedges on the side.

Ingredients:
4 Tablespoons Butter     
1 1/2 Teaspoons Seasoning - Creole
1 Cup (soft bread crumbs) Bread Crumbs     
8 ounce crab meat Crab
1/4 Cup (finely chopped) Celery     
1/4 Cup (finely chopped) Onions
1/2 Clove (finely minced) Garlic     
1 Tablespoon (finely chopped) Bell Pepper - Red
1 Eggs     
2 Tablespoons Mayonnaise
1 Teaspoon Worcestershire Sauce


Cooking Directions:
1. Rinse and pick over crab meat, discarding any pieces of shell or cartilage. Try to leave lumps as large as possible.

2. Heat 2 tablespoons butter in a large skillet over low heat; slowly saute finely diced onion, celery, red pepper, and garlic until tender.

3. Whisk egg in bowl; add mayonnaise, Worcestershire sauce, and Creole seasoning.

4. Combine with sauteed vegetables and soft bread crumbs, mixing well. Add the crab meat and form into loose patties; place on waxed paper-lined plate.

5. Refrigerate for about 1 hour, or until firm.

6. Heat remaining 4 tablespoons butter in large skillet over medium-low heat. Gently place crab cakes in skillet and cook for about 5 minutes. Turn and cook for 4 to 5 minutes longer, until cooked through. Serve with a remoulade sauce or tartar sauce.

Seasoning - Garam Masala     
1 Teaspoon (ground, for sauce)

4 Cans (8-ounce, for sauce)
Tomato Sauce - Canned     
1 Teaspoon (finely chopped, for sauce) Garlic
1 Teaspoon (finely chopped, for sauce) Ginger     1 Small (chopped, for sauce) Onions
1 Teaspoon (for sauce) Vegetable Oil     
1 Pound (cut into cubes) Chicken - Breast
2 Teaspoons (for marinade)
Vegetable Oil     1/2 Teaspoon (for marinade)
Seasoning - Salt
1/2 Teaspoon (for marinade)
Seasoning - Garam Masala     
1/2 Teaspoon (for marinade)
Seasoning - Cayenne Pepper
1 Teaspoon (finely chopped, for marinade) Garlic     
1 Teaspoon (finely chopped, for marinade) Ginger
2 Cups (for marinade) Yogurt


Cooking Directions:
1. For chicken marinade: Mix yogurt with ginger, garlic, cayenne pepper, garam masala, salt and vegetable oil. Add the chicken cubes, mix well, cover and refrigerate for several hours or overnight.

2. Place marinated chicken cubes on skewers and barbecue or cook in oven preheated to 450 degees F for 8 minutes on each side, in large baking tray. Do not overcook, as the chicken will continue cooking in the sauce.

3. For sauce: Heat the oil in a saucepan over medium-low heat. Add the onion, ginger and garlic and saute for 3 to 4 minutes. Add tomato sauce, cumin, garam masala and cayenne pepper (add more or less depending on how spicy you like it) and simmer for 15 minutes, stirring occasionally. Add the cooked chicken and cream (less then a cup if you prefer) and cook over medium heat for 5 to 10 minutes. Stir in fresh cilantro. Add salt to taste.

Note: Garam masala is available at many grocery stores and at any Indian market. Also, at Indian markets you may find red chili powder instead of cayenne pepper.
