Salmon Patties
-----------------

Ingredients:

1 (14.75 ounce) can salmon, undrained and flaked
1 slice of bread, shredded
3 Tbsp chopped green onion, including the green parts
1 medium garlic clove, minced
1 Tbsp fresh chopped dill weed, or 1 teaspoon dried
3 Tbsp minced green bell pepper
1 Tbsp flour
1 egg
1/2 teaspoon sweet paprika
1 teaspoon salt
Several turns of freshly ground black pepper
3 Tbsp vegetable oil

Method:

1 In a large bowl, gently mix together the salmon, bread, green onion, garlic, dill, bell pepper, flour, egg, paprika, salt and pepper. Form into 8 patties; each about 1/2 inch thick.

2 Heat oil over medium high heat in a large skillet. Cook the patties until nicely browned on both sides, about 3-4 minutes per side.

Curried Noodle Patties
--------------------------

1-2 teaspoons (red) Thai curry paste
4 eggs
6 ounces tofu, diced (roughly 2/3 cup)
1/2 cup cilantro, chopped
6 green onions, chopped
1/2 teaspoon sea salt
4 cups noodles, cold
2 tablespoons sesame or olive oil
peanuts, green onions and cilantro for garnish

Smash and spread the curry paste around the bottom of a medium bowl. Add one of the eggs and stir until the curry paste is well incorporated. Whisk in the rest of the eggs. Stir in the tofu, cilantro, green onions, and salt. Add the noodles. I've found it is easiest to work the egg evenly through the noodles if you use your hands and you don't get any noodle breakage.

Heat a well-seasoned skillet over medium heat. Place 1/3 cup of the noodle mixture into egg rings or handle-less, metal biscuit cutters and cook in batches for 3-5 minutes on each side, until golden. If the little bits of tofu and onions are escaping the noodles in the mixing bowl, just toss them into the egg ring on top of the noodles, those will end up on the bottom of the patty - nice and golden. To serve, season with salt and garnish with a sprinkling of green onion, cilantro, and peanuts.

Potato and Adzuki Bean Patties
-----------------------------------

1 cup dried adzuki beans
5 medium potatoes, unpeeled
1 egg
2 tablespoons butter
pepper, to taste
3 tablespoons fresh chopped parsley
1 cup grated Parmesan cheese
1/2 cup vegetable oil

Soak beans overnight in the refrigerator. Drain.
Cook potatoes in enough water to cover. Drain, reserving 1 cup water. Peel potatoes, then mash them together with egg, butter, and pepper, and set aside.
Cook beans, covered, in reserved potato water until tender and water is absorbed. (About 45-50 minutes) Combine beans, parsley and potato mixture. Shape into 12 patties and coat with cheese.
