- 150 g. white flour (maida) - 120 g. butter or dalda - 85 g. powdered sugar - 50 g. fine suji (semolina) - 1\2 tsp. vanilla essence - almonds and cashew nuts for decoration
1. Cream together the sugar and butter or dalda until light and fluffy. Beat in vanilla. 2. Stir in the maida (flour) and suji and mix into a firm paste. Knead lightly and mold into small rounds. 3. Place a piece of cashew nuts or almond in the center of each cookie. Bake on a greased pan at 190 C (375 F ) for about 12-15 minutes.

SPICED BROWN RICE SALAD
Ingredients 1 1/2 cups water , 1 teaspoon salt , 1 teaspoon salad oil , 3/4 cup brown rice , 1/4 cup raisins , 1/2 cup frozen peas , 3 tablespoons white wine vinegar , 1/2 teaspoon sugar , 1/4 teaspoon ground cardamom , 1/4 teaspoon whole cloves , 1/3 cup salad oil , 1 inch cinnamon stick , 1/2 cup cucumber -- diced , 1/3 cup cashews, dry-roasted -- chopped , 3 green onions -- thinly sliced , 1/4 cup mayonnaise , 1/4 cup yogurt
Method 1. In a medium saucepan bring the water to a boil with salt and the 1 teaspoon oil. Mix in rice and raisins. Cover, reduce heat, and simmer for 40 to 45 minutes, until rice is just tender. Mix in peas and let cool to room temperature. , 2. In a large bowl mix vinegar, sugar, cardamom, and cloves. Using a whisk or fork, gradually beat in the 1/3 cup oil until well combined. Lightly mix in cooled rice, cinnamon stick, cucumber, cashews, and onion. Cover and refrigerate for about 2 hours to blend flavors. , 3. Mix mayonnaise and yogurt until smooth. Fold into rice mixture. Serve in lettuce-lined bowl.

Method 1. Cut the Chicken into 1 1/2" chunks and marinate with salt, chilli powder and lemon juice, keep aside. 2. Grind the Coriander, mint & Spinach leaves to a fine paste. Mix this paste with dahi, cream, ginger and garlic pastes and the garam masala. 3. Mix the paste with the Chicken & leave in the fridge overnight. 4. 250 gms imli (tamarind) 2 cups sugar Salt according to taste 1/2 tsp chili powder Soak the imli in lukewarm water so that it softens. Rub well to remove the seeds. Strain out all the juice into a container. Put on low heat and bring to boil. Add sugar,salt and chili powder and keep stirring and cooking on low heat til it starts to become thick. A small piece of ginger can be added and later removed for an extra flavor. When desired consistency achieved remove from heat and allow to cool before storing (in a jar with a lid).

Hearts-filled-with-Love Cookies Fill these favorites with raspberry or strawberry jelly.
Sift together:
2 1/2 c flour 1 teaspoon baking powder 1/2 teaspoon salt
Cream together:
1 cup butter or vegetable shortening 1 cup sugar
Stir in:
1 well beaten egg 2 tablespoons Pet Milk 1 1/2 teaspoon vanilla
Chill overnight before using. Roll-out dough and cut with a heart cookie cutter. Each cookie needs a top and bottom. Bake at 350 degrees for 8-10 minutes.
When cool, assemble cookies. Place a teaspoon of jelly on the bottom of a cookie, then cover with another cookie. (The tops of the cookies should be facing outward on both top and bottom.) Sprinkle with 4X Confectioner's Sugar.

Hunka Chocolate Cookies
Ingredients 2 12-ounce packages semisweet chocolate pieces (4 cups) 4 ounces unsweetened chocolate 1/4 cup butter (don¿t substitute) 1/2 cup all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon salt 4 eggs 1-1/3 cups sugar 2 teaspoons vanilla 2 to 3 cups broken walnuts, toasted Melted white chocolate Melted semisweet chocolate
Directions 1. Lightly grease large cookie sheets; set aside. 2. In a heavy saucepan, heat one package of the semisweet chocolate pieces, the unsweetened chocolate and the butter until melted, stirring constantly. Transfer to a large mixing bowl to cool slightly. 3. Mix flour, baking powder and salt. Set aside. 4. Add eggs, sugar, and vanilla to chocolate mixture; beat with an electric mixer. Add flour mixture and beat on low speed till well mixed. Stir in remaining chocolate pieces and nuts. 5. Using 1/4 cup of the dough for each cookie, drop the dough 3 inches apart on lightly greased cookie sheets. Flatten slightly. 6. Bake the cookies in a 350 degree F oven for 12 to 15 minutes or until the edges are firm and the surface is dull and cracked. Let stand for 2 minutes on cookie sheets. Remove; cool on wire racks. Drizzle with melted white chocolate and semisweet chocolate. Makes 24 cookies.

Preheat oven to 400 F (205° C). Grease and flour 3 baking sheets. Sift flour and cocoa into a medium-sized bowl; stir in sugar. Make a well in center. Add egg white and butter and beat until smooth. Prawns in Ginger And Soya Sauce
Ingredients
Prawns-1 kg (washed in salt and garlic water) Garlic-15 cloves (peeled and thinly sliced) Lemons-4 Black Pepper-1 tsp (ground) Soya Sauce-1 tsp Oil-3 tsp Salt to taste Ajinomoto-1 tsp
Instructions
Heat oil in pan.
Add prawns with the salt and fry.
When all the water has evaporated from the prawns add sliced garlic, black pepper and Soya sauce to it.
Also sprinkle Ajinomoto on the prawns; cover with a tight lid.

Tomato Soup + Pasta & Basil
Ingredients
1 1/2 lbs. of ripe tomatoes remove seeds, peeled and chopped 2 Tablespoons of Olive Oil 1 Onion chopped 1 Clove of garlic crushed 1 Small red pepper chopped (optional) 4 Cups of chicken or vegetable stock 2 oz of tomato paste 1/4 cup of Basil 1 Cup of pasta (Shells)
Instructions Heat the oil in a heavy pan, cook the onion, garlic and red pepper till soft.
Add the tomato and cook another 10 minutes.
Add the tomato paste, salt and pepper to taste.
Cover and let simmer for 15 minutes.
Allow to cool slightly and put the mixture in a blender until it is smooth.
Return to the pan and heat gradually.
In boiling water, cook the pasta till almost done.

Ingredients
1/2 kilo boneless beef cut into small pieces Salt according to taste 1 cup presoaked dal channa 8-10 Whole dried red chilies 10 whole black pepper 6 cloves 1 bari illaichi 1/2tsp zeera 1 stick of cinnamon 2-3 green chilies 1/2 a bunch of fresh dhuniya leaves 1 egg 1 medium sized onion coarsely chopped 1 tsp ginger paste
Method In a pot put with meat,salt,red chilis,chopped onion,black pepper,cloves, bari illaichi,zeera,cinnamon,ginger and 3-4 glasses of water and leave to tenderize on low-medium flame. Meanwhile boil the dal separately until soft. When the meat has softened and water is dried completly add the dal and mix together. Remove from heat and let cool. Grind and add green chilis,egg,and fresh dhuniya. Form into kababs and fry. If you want to store them then arrange the formed kababs on a plate or tray without overlapping and put in a freezer for an hour. Then remove and put in any bag or box in which you want to keep. Freeze until needed.

Ingredients
1/2 kilo finely grinded minced beef Salt according to taste 1 tsp chili powder 1 small onion chopped 1/2 tsp garam masala 1 small onion chopped and fried 1 egg 1tbs lemon juice 1/2 tsp ginger paste
Method Mix all spices together and add to the minced beef. Mix well,cover and leave in fridge to marinate for 3-4 hours. Then form into long kababs (like sausage) and either fry in a little oil or barbeque. Serve with onion, mint chutney and lemon.
