Torrents of rain pour from my heart,
with just one thought of you.
That one brief moment overwhelms,
torment tears at my soul.

Hugs Are Sunshine

A special feeling of tenderness,
deep felt warmth in my heart.
Arms wrapped around each other,
hugs allow sadness to depart.

Always so good when given freely,
feeling safe or just saying hello.
Some people we could hug forever,
never wanting to let them go.

Hugs are a sweet sign of affection,
gives a warm fuzzy feeling inside.
Sometimes heads lay on a shoulder,
when love dwells deep down inside.

God gave us two arms to hold on tight,
when things become to much to bear.
When woken by fears amid the night,
a warm hug lets you know they care.

Hugs turn gray clouds to sunshine,
can make a smile out of a frown.
Show those you love how you care,
hugs turn their frowns upside down.

I sit here and miss someone special,
wanting a hug from my dear friend.

Easy tears gently falling,
with the slightest thought of you.
Each little thing I recall,
crying the whole night through.

A glimpse of a memory,
can make my heart feel sad.
Now faded, yet still captures me,
I long for what we once had.

Out of no where, tears will start,
head in hand, cry out of control.
Missing you with all my heart,
without, I no longer feel whole.

Is there even an end in sight,
will time deaden all this pain?

Ocean Dreams

The beach allows me to dream,
as I walk along the sands,
I pick up shells along the way,
adrift from far away lands.

Looking out upon the sea,
where blue sky and water meet,
I dream of a dry parched desert,
as the hot sands scorch my feet.

I'm in a mountain village,
as cool breezes cross my face,
foam lapping at water's edge,
I again dream of another place.

It is cold up in Alaska,
my eyes feel the sun's hot rays.
In the land of the midnight sun,
where sunlight can last all day.

The sounds of children splashing,
hear their laughter in the sun.
I start to dream of childhood,
remembering summertime fun.

Crashing sounds of ocean waves,
relax, begin to dream once more.
Now stranded on a desert island,
washed upon the sandy shore.

Searching the beach, I find a shell,
shaped like a beautiful star.
Could it have come from Heaven,
could it have fallen that far?

Dreaming of all these far places,
as I stroll along the quiet beach.
these places, I will never see,
to grasp them is out of my reach.

When my mind wants to get away,
and my thoughts are just for me.
I go to the beach , close my eyes,
begin dreaming of the seven seas.

A winding path, well traveled and worn,
journey began the day we were born.

Tempest brews in red sky morning,
far beyond the shadowy reef.
Dark clouds predict without warning,
sweltering summer heat relief.

Roar of rumbling in distance heard,
tumultuous are wind blown swells.
Safe harbor flight for coastal bird,
buoys swaying with clanging bells.

Wind blown seas begin to swirl,
waves start pounding upon the beach.
Off shore eddys begin to whirl.
the tidal surge about to breach.

Sea foam bubbles upon the sand,
carving pathways between each dune.
Turbulent meeting, sea and land,
as tides ebb and flow with the moon.

Sheets of rain amid forceful gale.
moorings break, boats drift with tide.
Hear the snapping of the main sail,
we wait for the storm to subside.

Cherry Chocolate Kisses
--------------------------


1 c powdered sugar
1 c marg. or butter softened
2 tsp maraschino cherry juice
1/2 tsp. almond extract
few drops red food coloring
2 14 c all-purpose flour
1/2 tsp salt
1/3 c maraschino cherries, drained and chopped
about 48 chocolate candy kisses.


Preheat oven to 350°F. Blend sugar, butter, cherry juice, almond extract, and food coloring well. Mix in flour and salt. Fold in chopped cherries. Shape dough into 1" balls and place 2" apart on cookie sheet. Bake 8-10 min. While still hot, top each cookie with choc. candy. Makes about 4 doz.

Macaroni Salad
-----------------

you can make this big quainties for large parties, or reunions.

1 pkage macaroni, yur chioce(shells are nice)
1 can tuna
3 stocks, celery, chopped
1 can, small corn
2 large, carrots, graded
1 green onion, add more it want, chopped
4 baby pickels, chopped
4 cups, manaize, add more/less

cook macaroni as package. cut all veggies, add tuna and mix. you can also add a couple of boiled eggs sliced and paperika to garnish, if desiered. you can eat right away which might be warm but best to let sit for abit and it is so good cold.

Barbecued Peppered Shrimp
---------------------------

1 c. vegetable oil
2 Tbs. toasted sesame oil
3" piece fresh ginger-sliced
1 bunch scallions, chopped course
1 Tbs. cracked black pepper
1 Tbs. soy sauce
1/2 tsp. cayenne pepper
Pared zest of 2 oranges
40 - 50 large shrimp, peeled & deveined

In a large skillet, heat the vegetable and sesame oils until almost smoking. Add the ginger, scallions, pepper, soy sauce, cayenne and orange zest. Cool completely, and then add the raw shrimp. Marinate overnight in the refrigerator.

When marinated, push 2 or 3 shrimp onto small wooden skewers (that have been soaked overnight in water), place filled skewers in plastic bag. Take to the picnic, barbecue over hot coals until pink. Watch carefully - they will cook very quickly. (Also can be stir fried in hot saute' pan on stove and served with toothpicks.)

Banana's Early Morning Muffins
--------------------------------

Ingredients


3 large ripe bananas
3/4 cup sugar
1/2 cup applesauce
2 large eggs
3 tablespoons plain yogurt or low fat sour cream
1 teaspoon baking soda
1 3/4 cups whole wheat flour
1/4 cupwheat germ or crunchy granola
Comments
*You can also add chopped nuts, raisins, carob or chocolate chips or any other surprise treat!


Directions


Heat oven to 375°F.
Mash the bananas in a big mixing bowl with a potato masher.
Add the sugar, eggs and applesauce and mix well.
Stir baking soda into yogurt or sour cream and it will become foamy which makes the muffins rise.
Add the flour and wheat germ And stir until just mixed (muffins won't rise if you overmix).
Spoon mixture into muffin papers in muffin pan.
Bake about 10-15 Minutes until done.

Chili Cheese Pie
-------------------

2 deep dish pie crusts (found in grocery freezer section)
2 cans of chili (I tend to like to use chili w/meat & beans, but you can use anything)
2 cups of rice (I use the instant bags of rice, like Success Rice....then, you only need 1 bag)
2 cups shredded cheese (typically, I use Mild Cheddar, but I like to try different kinds)

Preheat the oven to 350°F. Poke holes all over the pie crusts with a fork, and place both on a cookie sheet. Cook the crusts for 10 minutes. During this time, cook the rice (if using instant rice, boil 1 bag for 10 minutes). Remove the crusts, and set aside. In a large bowl, combine the cooked rice, and UNcooked chili. Mix both together well, and put half of the mixture into one pie crust, and the other half into the second crust. Put one cup of shredded cheese on top of each pie. Bake for 30 minutes.

**Second pie can be frozen for use at a later date.....just use the microwave to re-heat!

Apple Juice Roast
--------------------------


Ingredients


4 lb Boneless Beef Chuck Roast
1/4 tsp Pepper
2 ea Med. Onions, Sliced
1/4 tsp Thyme Leaves
2 tb Butter or Shortening
1/4 tsp Prepared Mustard
1 c Apple Juice
1/8 tsp Basil Leaves
1 tb Catsup
3 ea Large Sweet Potatoes *
1 tsp Salt
1 x LemonJuice


GARNISHES


1 x Chopped Parsley OR 1 x Gravy 1 x Apple Rings And Parsley


Directions


Sweet potatoes should be pared and cut into pieces.
Cook onions in 1 T butter or shortening in Dutch oven until tender-crisp; Set aside.
Brown roast in remaining butter or shortening in Dutch oven over medium heat 15 to 20 minutes or until browned on both sides.
Pierce entire surface of meat with fork.
Combine apple juice, catsup, salt, pepper, thyme, mustard and basil;Add to meat.
Top meat with reserved cooked onions; Cover and cook slowly 2 1/2 hours or until almost tender.
Brush sweet potatoes with lemon juice for bright color; Add to meat.
Continue cooking, covered, 30 to 40 minutes or until meat and potatoes are tender.
Place meat and potatoes on warm platter.
Sprinkle potatoes with chopped parsley or garinish with apple rings and parsley, if desired.
Serve gravy over sliced meat.
